Protein-Packed Sweet Potato Smoothie

This Sweet Potato Smoothie, enhanced with collagen peptides powder, is a quick, quality fix for those that are short on time but need a hit of micro- and phytonutrients. I enjoy having this smoothie post training to replenish my glycogen stores, but it also makes an amazing milkshake alternative on hot summer days.
To make this Sweet Potato Smoothie quick and easy (and amp up its gut-friendly resistant starch), you’ll need to plan ahead. Prepare your sweet potato the night before or earlier in the day. Cook the sweet potato, allow it to cool, chop into slices or chunks, then transfer to a lined glass container and freeze for at least 1-2 hours. Cooking a large batch of sweet potatoes will save even more time if you make Sweet Potato Smoothies regularly.
Protein-Packed Sweet Potato Smoothie
Start to Finish: 10 minutes
Ingredients:
- 1 cup sweet potato, pre-cooked and frozen
- 1/2 cup full-fat, canned coconut milk (BPA-free)
- 1/2 cup water
- 1/2 tablespoon cacao butter
- 2 tablespoons cacao powder
- 2 scoops whey protein
- 1 scoop collagen protein
- 1/4 teaspoon salt
- 1/4 teaspoon granulated stevia, or more to taste
- Optional: Cacao nibs and unsweetened desiccated coconut to garnish
Instructions:
- Add all ingredients to the blender except cacao nibs and desiccated coconut.
- Blend until smooth. If desired, add more water for a thinner texture.
- Add the smoothie to a bowl or mug and top with garnishes.
