Coconut Keto French Toast
Start to Finish: 20 minutes
Ingredients:
- 1 loaf Paleo Coconut Flour Bread (I added extra turmeric to this batch to create a yellow hue)
- 1 tablespoon grass-fed butter or ghee
- 1/3 cup coconut yogurt
- Granulated sugar-free sweetener to taste (I used 2 teaspoons of stevia)
- 1 teaspoon vanilla extract
- Optional garnishes: Cacao nibs, fresh organic berries, shredded coconut, cinnamon, edible flowers
Instructions:
- Get your Paleo Coconut Flour Bread and slice it into 3 pieces. Then slice each piece in half again lengthwise to create 6 total pieces of bread.
- In a frying pan, heat butter or ghee on medium heat and swirl to coat the pan.
- When the pan has heated, add 2 pieces of bread and cook on each side until golden brown and toasted.
- While bread toasts, create yogurt topping: Add coconut yogurt, sweetener and vanilla to a bowl. Use a hand beater or whisk to whip the coconut yogurt for a few minutes until it starts to thicken. Taste the yogurt and add more vanilla or sweetener if desired.
- Assemble keto French toast: Divide finished bread between two plates and top with yogurt mixture and garnishes.
- Keep the remaining pieces of bread in an airtight container and consume within 2 days, or freeze for the next time you make keto French toast.
