Paleo Coconut Flour Bread

It’s hard to find a bread recipe that has minimal ingredients, is free from nuts like almonds, is low in carbs and is as simple as this recipe.
Whipping up a batch of this paleo coconut flour bread will take you less than 5 minutes. All you have to do is drop all the ingredients into your food processor and blend. Then scoop the mixture out into your pre-prepared bread loaf tin and bake. See how quick and easy it is?
This low-carb keto bread is best toasted or fried in butter or ghee until golden brown and crispy, and sprinkled with a touch of salt (and garlic powder, if you’re not sensitive). Once it’s toasted, it also pairs extremely well with bacon and avocado.
Paleo Coconut Flour Bread
Start to Finish: 45 minutes (active: 5 minutes)
Ingredients:
- 1 cup coconut flour, sifted
- 1/4 cup psyllium powder
- 1/2 cup collagen powder
- 8 eggs
- 1/4 cup water
- 1/2 teaspoon salt
- 1 teaspoon baking powder (for paleo option, mix 1 part baking soda with 2 parts cream of tartar)
- 2 teaspoons apple cider vinegar
- 1/4 cup heaping melted grass-fed ghee or butter
- 1/2 teaspoon turmeric powder
Instructions:
- Preheat the oven to 350F. Grease and line a 7 3/8″ x 3 5/8″ bread loaf tin.
- Combine all the ingredients together in a food processor until evenly combined. The mixture will be quite thick as the coconut flour will absorb all the liquid. Don’t add more liquid, it will still bake well. (Note: because collagen proteins are delicate, blend them only on low to avoid damaging them.)
- Scoop the mixture into the pre-lined tin and spread it out evenly. Use your hands to mould it or pat it down and smooth it out a bit more.
- Place it in the oven for 35-40 minutes, or until golden brown and cooked through.
- Remove it from the oven and allow it to cool.
